Embark on a refreshing culinary voyage featuring a luscious feast made of succulent and briny oyster and lobster delicacies exquisitely prepared at Harbour Restaurant. In our “Oyster & Lobster” Dinner Buffet, our Executive Chef has creatively designed a tempting array of signature dishes prepared with selected ingredients from the U.S., Canada, New Zealand and Chao Zhou for you to kick start 2018 in a delicious way.
Lobster Trio (One serving per patron)
It is a complimentary dish where each guest will receive one serving. Each serving consists of three dishes, namely
- Baked Boston Lobster with Miso Paste
Boston Lobster from Canada is simply baked with Miso Paste, Sweet Sake and Salad Sauce for 10 minutes to make it authentically briny and its succulent flavour to stand out.
- Lobster Claw served with Steamed Egg White
A mouthwatering lobster claw is added to a velvety steamed egg white topped with spinach sauce, a colourfully decorated delight you can hardly resist.
- Lobster Bisque with Porcini Mushroom and Mock Shark’s Fin
Mock Shark’s Fin is one of the authentic local delights which is very popular in the Hong Kong community. Our Executive Chef has creatively integrated the dish into Lobster Bisque. The soup is made with assorted vegetables, butter, and Tarragon which features a Brandy flavour, and enriched with plentiful ingredients. Grilled lobster shells and fresh lobster meat are mixed together with ingredients of Edible Fungus, Mock Shark’s Fin, Porcini Mushroom, chicken slice, and bamboo sprouts in which water chestnut flour is added to adjust the soup’s thickness. A tasty Lobster Bisque crossover with a local delight is then deliciously prepared.
This is a very refreshing appetizer. Lobster meat is seasoned with traditional Louie Sauce made with salad sauce, cream, Maggi sauce and lemon sauce and Korean spice sauce. Savour it with tomato and cucumber grains, and its sweet-sour flavour will satisfy your appetite.
Crispy on the outside and soft on the inside, the fragrant Lobster Crumble is filled with tender lobster meat. Have a tasty crumble to warm your appetite this early spring.
Mini Oyster Salad in Thai Style
Quick-boiled mini oysters from Chaozhou are soaked in the homemade Thai-style salad sauce mixed with fish sauce, garlic, lemongrass, parsley head, red cluster pepper, white coconut sugar, and lime juice. Garnished with slices of onion, celery and chili to enrich its Thai-style flavour, it is another refreshing spicy appetizer that will tantalise your taste buds.
Cream of Oyster and Saffron
The aromatic soup is prepared with fresh Chaozhou mini oysters and cream for a few hours. It is further enriched with mini oysters which are fried with onion, celery, Tibetan Saffron and white wine. Let’s have a warm fragrant thick soup after savouring refreshing appetizers.
Prepared in the Live Cooking Station, Oyster Okonomiyaki is a creative dish that highlights a featured blend of local delights Okonomiyaki and Fried Oyster Cake. The latter originates from Chaozhou. Fry the paste made with slices of broccoli and carrot, scallion, egg, and quick-boiled Chaozhou mini oysters on the Teppanyaki plate, and relish the dish with sesame sauce, Japanese-style salad, and slices of seaweed and wooden fish, you will indulge in a unique cuisine.
A pasta roll filled with Chaozhou mini oysters, spinach and cheese which is seasoned with tomato sauce after baking.

Oysters from the U.S. are famous for their mild taste and rich texture. In addition to the fresh U.S. and New Zealand Oysters available in the Assorted Seafood Platter, we have specially prepared baked U.S. Oysters with options of sauce for you to choose from, enriching their authentic light briny flavour.
Other than the above delicacies, choices of fresh seafood including Canadian Snow Crab Legs, Pacific Sea Whelks, New Zealand Mussels, Blue Mussels, Edible Crabs, Clams, Fresh Shrimps, and New Zealand Oysters are alternately served on the Assorted Seafood Platter. The Sushi and Sashimi Counter serves various Sashimi selections such as Salmon, Octopus, Tuna, Hokkaido Scallop, Herring, Sweet Shrimps, and the weekend items Hokkigai and Swordfish which will be available on Friday to Sunday and Public Holidays only. All are sliced on the spot and served on a rotational basis. We have also prepared a wide range of delicacies such as Roasted Lamb Leg and U.S. Sirloin of Beef, Grilled Teriyaki Lamb Rack, Pan-seared Duck Liver with Apple Balsamic Reduction on Toast, Grilled Short Rib of Beef, Pan-seared Chicken Breast with Wild Mushroom Sauce, Indian Lamb Curry served with Poppadum, Stewed OX Tail in Red Wine Sauce, Steamed Scallop with Rice Vermicelli and Garlic, Steamed Seabass with Ginger, Spring Onion and Soya Sauce, Fried Rice with Scallop, Chicken and Garlic Chips, Stir-fried Clams with Black Bean, Chili and Garlic Sauce, etc., which will be provided alternately. Seafood Laksa in Malaysian Style is prepared on the spot upon your order at the Live Cooking Station.
