Ruby’s take on this traditional dish includes 8 freshly prepared ingredients – a Spring-salad with crispy strips of fried Flour Tortilla, Smoked Salmon, Red Cabbage, Cucumber, Red Pepper, Carrots, Swiss Cheese, and then drizzled with a classic Vinegarette to add just a little bit of zest. For added luck, you toss this salad up in the air – at your dinner table – together with your nearest and dearest, family and friends to bless the arrival of Chinese New Year!

富豪金殿 — 賀歲團年菜譜

富豪金殿首席中菜行政總廚楊嘉輝師傅精挑多款傳統賀年食材,炮製出十款極具意頭及應節的新春佳餚,寓意十全十美。新春佳餚將於2020年1月25日至31日 (正月初一至初七) 供應,菜式價格由$228起。推介菜式有「金殿特式風生水起」(三文魚撈起)。撈起源於新加坡,高舉雙筷把所有食材越撈越起,寓意風生水起;撈得越高,來年定必步步高升。「撈起」時食物散佈碟面亦有財富滿溢之意。而三文魚魚生更寓意年年有餘及生氣勃勃,是新春必吃菜式之一。另一賀年菜式「得心應手」(原隻南非鮑魚花膠扣鵝掌),以原隻鮑魚扣鵝掌,取鵝掌寓意凡事必能得心應手,滿掌金錢,加入名貴的海花膠,更顯豐盛。「一本萬利」(花膠髮菜紅燒西班牙元蹄),以別具意頭的材料作食材。髮菜寓意發財,紅燒元蹄有橫財就手的意思,寓意來年可財源滾滾來。

Kung Hei Fat Choi! In celebrating the year of the Rat, Regal Hongkong Hotel wishes guests a prosperous year by parading out a series of auspicious Chinese delicacies. 各款賀年佳餚均載有吉祥意頭,寓意步步高升的上海年糕燴松葉蟹鉗(港幣$288),冬天時令的松葉蟹肉質鮮嫩且味道香濃,上海年糕吸收滋味蟹汁,讓人一再回味。中文的「生菜」及「生財」讀音類近,因此賀年菜式很多時候都會用上生菜為材料,而梁師傅就特意炮製寓意生財就手的唐生菜燴豬腳仔(港幣$258),豬腳仔經60分鐘慢煮烹調至軟腍入味,伴以唐生菜上碟,為賀年必備之選。其餘推介亦有山瑞裙絲炒龍蝦肉(港幣$528)及寓意發財好市的發菜燴蠔豉(港幣$308)等。Every dish is believed to bring happiness and prosperity in the Chinese New Year. Highlights from this special menu includes Sautéed Snow Crab Claws with Sliced Glutinous Rice Cake (HK$288) and Braised Pork’s Trotter with Seasonal Vegetables (HK$258). The former delicacy has made use of Japanese snow crab where its succulence is at its best this season, while the latter dish features lip-smacking pork’s trotter and Chinese lettuce that rhymes “wealth” in Cantonese pronunciation. The pork’s trotters has been braised masterfully for a minimum of 60 minutes until soft and tender.
