這陣子香港的天氣忽冷忽熱,特別令人容易著涼。所以我們應注意飲食,於新年前以食療養身,增強免疫力。

香港君悅酒店咖啡廳主廚Marc Briol首次於自助晚餐嘗試加入傳統中草藥成份,推出滋補菜式。經過對中國飲食文化及食譜的一番鑽研後,主廚Marc與團隧一起悉心設計了結合傳統飲食智慧的一系列滋補菜式,讓客人可於冬季品嚐美味之餘亦可恢復內在平衡,保持健康。

人參冬蟲夏草鹿茸枸杞子燉竹絲雞湯

人參雞湯是一道亞洲飲食,一般是偏向溫補及有強身的作用。再加入原條的冬蟲夏草、鹿茸和枸杞子後,令湯散發出自然的甜味。

川芎白芷紅棗紅花魚湯浸鱈魚

By studying Chinese culture and the concepts behind Chinese food philosophy, Chef Marc has come up with a “Luxury of Health” menu for diners to stay healthy in winter.

Ginseng and black chicken double boiled soup with cordyceps, pilose antler and wolfberries
This soup is the ultimate comfort for Asians as it strengthens vitality and keeps you warm. Cordyceps, pilose antler and wolfberries are used which offers a slight sense of sweetness to the soup.

Braised pacific cod fish with Chuanxiong, angelica dahurica, red jujube and saffron
The soup base of this dish is made from boiling giant grouper for two hours. This brings out the freshness and sweetness of the sustainable black cod fish, with a combination of Chinese herbs such as Chuanxiong, angelica dahurica, red jujube and saffron. This dish is particularly good for women as it is highly nutritious and promotes blood circulation.

Braised sea cucumber with tuber fleece flower, milkvetch root, Asiabell root, black bean and chicken sauce
Rich chicken soup is used for the soup base with different types of roots, such as fleece flower, Asia bell and milkvetch root, allowing the Guangdong sea cucumber to absorb all the flavour. The texture is relatively thick and it is good for benefiting qi.

Beef brisket and tendon stew with ganoderma, morinda root, desert living cistanche and walnuts
Beef brisket and tendon stew is slow-cooked to offer a meaty flavour. The soup base is thick as it is rich in collagen. This dish is especially beneficial to men as it has ganoderma, morinda root and desert living cistanche to reinforce kidney-yang.
